Jérôme Fornerot, a sixth-generation Saint‑Aubin vigneron, farms high-altitude Chardonnay vines planted in the 1980s at 400–425 m in the Hautes‑Côtes de Beaune. The soils combine white clay-limestone and a thin layer of red volcanic lava, giving the wine layered complexity and terroir clarity

Harvested by hand, grapes were gently pressed and fermented with native yeasts in French oak barrels. The wine was aged for 10 months in barrel, then rested one month in tank before bottling. The result is a refined, mineral-driven Chardonnay: bright citrus, saline tension, and vibrant structure with poised acidity

Domaine Jérôme Fornerot traditionally sold off their grapes to négociants. But because of all those Burgundy price hikes, it has finally become economically feasible for them to produce and bottle their own wines. In fact, they are now able to invest in a larger and better wine-making facility, promising even higher quality in the future.
