A vermut built on manzanilla rather than a neutral white wine, which is why it tastes like nowhere else. Barbadillo has been making sherry in Sanlucar de Barrameda since 1821, and Ataman — first registered in 1943 — starts from that salty, flor-aged base before the Andalusian botanicals go in: Seville orange peel, wormwood, rosemary and elderberry. The unusual part is what gets blended back: a small portion of older vermouth and quinine wines that have been aging in the cellars for decades, which brings a depth and bitterness no young vermut can fake. It mixes beautifully, but the honest recommendation is over ice with an orange twist, before dinner.
