The barrel recipe here is the whole story: 30% new American oak, 20% used bourbon barrels and 50% used tequila barrels, a mix built to season the spirit rather than bury it under wood. Everything upstream is patient in the same way: agave grown to six to eight years of maturity, cooked in a brick oven for about 24 hours and then rested another 30 before double distillation in stainless pot stills with copper. The Camarena family traces its tequila lineage to 1938, and the name comes from a horse race — near the finish line the mare Paloma pulled alongside the horse Pinto and their combined strength broke the chain strung across the line, saving the brothers. The watercolour horse on the label, painted by a Mexican artist, stands for freedom and fluidity. A reposado for people who actually want to taste the plant.
