Coeur de la Reine Touraine Sauvignon Blanc 2025

$1799

Most Touraine Sauvignon is pressed and fermented as quickly as possible; this one takes its time. More than half the crop gets six hours of skin contact before a gentle pneumatic pressing, the juice then settles cold at 5°C for a week, and fermentation runs slow and cool over three to four weeks before the wine rests on its lees in tank. All of that builds texture without blunting the grapefruit-and-blackcurrant-bud snap that makes Loire Sauvignon worth drinking in the first place. The fruit comes off clay and flint soils on the south bank of the Cher, farmed sustainably by two fourth-generation Touraine families, Ludivine Marteau and Vincent Leclair, who hand-harvest and bottle the wine vegan. Pour it cold.

Tasting Notes & Food Pairings

Perfect Pairings

Fresh goat cheese such as Sainte-Maure or Selles-sur-Cher, grilled asparagus, oysters, ceviche, or a pea and herb salad.

Tasting Profile

Grapefruit, lime and blackcurrant bud with a green-herb lift. Dry and light-bodied, with brisk acidity, a little lees-given weight in the middle and a crisp, faintly spicy finish.
