Domaine Ciringa Desertno Vino Sauvignon Blanc 2017 (375ml)

$2199

Botrytized Sauvignon Blanc from a 60-million-year-old limestone reef straddling the Slovenian-Austrian border is not a sentence you get to write often. Domaine Ciringa is the Slovenian arm of the Tement family, whose famous Zieregg vineyard runs right across the frontier; Ciringa is simply the Slovenian name for the same hill. In vintages when noble rot cooperates, they make this: roughly 20% botrytized fruit, fermented in cask, landing near 75 grams of residual sugar held in check by about 7 grams of acidity. Think Beerenauslese meeting Sauternes, with the herbal snap only Sauvignon Blanc brings. Organic farming, spontaneous fermentation, no fining and no filtration. The half-bottle is exactly right, because this is a wine for the end of the meal, not the length of it.

"The 2017 Sauvignon Blanc Desertno Vino is quite unique. Its savory bouquet blends wild herbs and damp forest floor with crushed rocks and hints of tropical melon. It’s decidedly sweet upon entry with a salty tinge to balance. Zesty acidity adds a reverberation of tension throughout. Shades of young mango and kiwi linger through the spicy finale, leaving a saturation of fermented ginger to taper off slowly." —Eric Guido

"Vinified with 20% of botrytis grapes, the 2017 Fosilni Breg Sauvignon Blanc Desertno Vino fermented up to 15.5% alcohol and 100 grams of residual sugar. The golden-yellow colored Beerenauslese displays the flinty and refreshing lemony notes of the Zieregg/Ciringa and is a full-bodied, sweet and structured wine with some tannins and a highly intense and sweet texture. From very tiny berries, this is an impressively structured sweet wine with well-integrated acidity and food-friendly tannins. However, this is fiery too. Have a cigar with it! Tasted in May 2019." —Stephan Reinhardt

Perfect Pairings

Roquefort or Stilton, foie gras, or a simple apricot tart.

Tasting Profile

Sweet but not heavy. Honeyed apricot and candied citrus pulled taut by bracing acidity, with a savory, herbal finish.
