If you've only ever read about Raveneau, this is the place to start: village Chablis from a domaine whose name usually comes attached to grand and premier cru. Nearly everything the family farms is top-tier. That means three grands crus (Les Clos, Valmur, Blanchot) and six premiers crus, including Montée de Tonnerre and Butteaux. Their village Chablis comes from a single parcel of less than a hectare, a small part of a house that makes only about 3,000 cases a year in total. It gets the same old-fashioned treatment as the top sites. The house approach has generally meant hand-picking, gentle pressing and fermentation in tank, followed by a long stay in older barrels and feuillettes with very little new oak. The domaine was founded in 1948. François Raveneau's sons Bernard and Jean-Marie still farm and make wine the way their father did, and Bernard's daughter Isabelle has now joined them as the next generation. It's not a trophy bottle, just an honest taste of how one of Chablis's great families works, at an approachable level of their range.

Tasting Notes & Food Pairings

Perfect Pairings

Raw oysters on the half shell, warm gougères, sole meunière, roast chicken with tarragon cream sauce, or a young Crottin de Chavignol goat cheese.

Tasting Profile

Expect classic Chablis with a little extra texture: lemon, green apple and white flowers over a chalky, oyster-shell minerality from the Kimmeridgian limestone. A long stay in older barrels and feuillettes typically adds a subtle roundness rather than oaky flavour. The medium body stays taut, with bright, cutting acidity and a long, salty, dry finish.
