Three decades on, this is the Maume family's own Mazis-Chambertin in magnum, from the years before the domaine changed hands. It's a bottle that rewards everyone at the table for the wait. Domaine Maume, founded in 1870, was a tiny estate making roughly 1,250 cases a year, and its Mazis came from just 0.64 hectares of clay-limestone. It was a stubbornly traditional house. Maume rejected new clones in favour of the diversity of old Pinot stock. The wines were once known as rough and animalistic, with the edges softening in later decades. They also earned a reputation for going the distance: a 1979 Mazis tasted in 2008 seemed capable of going on forever. Stand the bottle upright a day ahead and decant gently.

Tasting Notes & Food Pairings

Perfect Pairings

Roast pheasant or guinea fowl, coq au vin, beef bourguignon, wild mushroom risotto or a mushroom-and-thyme tart, aged Comté.

Tasting Profile

Expect the hearty, earthy side of Gevrey-Chambertin grand cru: dark cherry and plum that, with long cellaring, give way to forest floor, leather and game, with the savoury, slightly wild edge typical of Maume's traditional style. Typically full and firmly built, with fresh acidity and tannins that soften with age, leading to a long, savoury finish.
