Classic village Chablis from an old-school family domaine, in 375ml for nights when a glass or two is exactly the right amount. Cyril Gautheron now runs day-to-day operations at this seventh-generation estate in Fleys, about 4 km from the town of Chablis, after taking over from his father Alain. The village wine comes from vines on the right bank of the Serein. They grow in Kimmeridgian marly limestone packed with marine fossils, and the soils around Fleys are known for fossilized snails, of which Alain keeps a few in the tasting room. The family's stated goal is a balance of fruit and minerality. The farming is careful without being showy: no weedkillers, ploughed or grassed rows, and yields kept down by disbudding. An honest place to start.

More about

Glance at Gautheron’s label and you’d guess this is a classic producer. And, well, sometimes you can judge a book by its cover. Gautheron is, as Burghound says, an “old school domaine” with a “decidedly traditional style.” But traditional doesn’t mean staid: Gautheron is an exciting producer to get to know. Partly, that’s down to Cyril, (son of Alain) bringing new energy and focus to the old-school approach: yields are low, farming is more focussed than ever, and the wines have both intense expressiveness and clear identity.

But more than that, it’s the thrill of honest Chablis itself: Racy Kimmeridgian minerality, cooling northern acidity, and beautiful fruit in terroir-specific variations.

Tasting Profile

Expect classic village Chablis: green apple, lemon and a touch of white flowers, with the chalky, oyster-shell minerality Kimmeridgian limestone is known for. Typically light to medium-bodied with bright, mouthwatering acidity, it aims for a balance of fruit and minerality rather than richness (think Chardonnay at its crispest). It should finish dry, clean and lightly saline.
