If you've ever ordered a Cold IPA, you have Kevin Davey to thank. He came up with the style while at Wayfinder, and Staggers & Jags is his version, made by the person who started it. The recipe is the whole idea: 20% rice in the grist and the brewery's house lager yeast, fermented warm. That gives you the crisp, stripped-down frame of a lager carrying a full load of hops. It's built to be completely dry, bitter and intensely hoppy with a super clean finish, and the brewery cheerfully calls it a "wester than west coast" IPA. Gold Dot is Davey's lager-focused project with Lisa Allen. It's owned and run by the brewers themselves, and it's brewed and canned at Heater Allen in McMinnville, Oregon, on a simple philosophy: use the best ingredients available and give the beer the time it needs. If you've had your fill of soft, hazy IPAs, this is the bracing reset.
