Tepeztate is the agave that tests everyone's patience: it grows wild on rocky slopes and takes the better part of two decades to mature — the plants here were 18 to 23 years old — and it yields some of the most distinctive, green and herbal mezcal in Oaxaca. The Arellanes brothers are the eleventh generation of their family making mezcal in Santa Catarina Minas, the village known for distilling in clay pot stills rather than copper, with the maguey roasted first in a wood-fired earthen pit. This bottling then rests about four months in French oak that previously held Cognac, and is bottled undiluted at full barrel strength, 54.6% ABV, from a single 245-liter batch. They replant three agaves for every one harvested. Neat, in a copita, no ice.
