Orphan Barrel exists to hunt down whiskey that got forgotten in a warehouse and bottle it before anyone else finds it, and Night Sage is the 25th release in that series. This one is a blended Canadian whisky aged twenty-five years, built from stocks distilled in Ontario and Manitoba. Maturation happened in two barrel types, both of which had previously held Canadian whisky: first-dump oak barrels used only once before, and multi-use barrels. That choice matters — twenty-five years in aggressive new wood would turn any whisky into a plank, and the gentler cooperage is why this one still tastes like whisky instead of sawdust. Butterscotch, vanilla, and lightly toasted oak on the nose; brown sugar, golden toffee, walnut, and fig on the palate; a long, warm finish of dried fruit and oak. One batch, and when it's gone it's gone. Drink it neat or over a single large cube — this is not a mixing whisky.
