Think of it as Japan's answer to Chartreuse: a green, bitter herbal liqueur modeled on monastic classics like Chartreuse and Centerba, built around wormwood that Tatsuya "Moto" Motonaga grows himself on the farm next to his distillery, with no pesticides and minimal intervention. Motonaga came out of botanically obsessed cocktail bars like Bar Benfiddich in Tokyo and WA-SHU in Taipei. When 2020 shut that world down, he went to Europe and visited more than 70 distilleries to learn how botanical liqueurs are really made. Then he went home and founded Iseya Distillery in 2021, in a 100-year-old house less than two kilometers from Lake Sagami in Kanagawa prefecture. Verde draws on more than 40 botanicals, including mugwort, fennel, dandelion, sage, angelica and licorice alongside blood orange and bergamot. They're macerated in a neutral sugarcane spirit and rounded out with honey and cane sugar. Scarlet calls itself the first Japanese amaro to be commercially bottled and exported, and for anyone who loves green herbal liqueurs, this one brings a genuinely new accent to a very old style.

Tasting Notes & Food Pairings

Perfect Pairings

After dinner, neat or on the rocks, with dark chocolate, pistachio biscotti or a cheese plate of aged Gouda. As a highball with soda and lemon peel, it goes well with yakitori, shiso-heavy salads or fried tempura vegetables.

Tasting Profile

A green herbal amaro: grassy, leafy herbs and bright citrus up front, with wormwood bitterness running through it. Honey and cane sugar soften the bitterness. A moderate 30% ABV.
