Ulysse Collin Champagne Blanc de Blancs Extra Brut Les Pierrières 2017

This is the wine that brought the Collin name back to Champagne. Les Pierrières was the first wine Olivier Collin vinified, beginning with the 2004 harvest, after his father had rented the family's vines out to a big Champagne brand in 1987. It comes from a 1.2-hectare monopole in Vert-Toulon, the village next to the family's home of Congy. There, 10 to 50 centimetres of poor topsoil sit over soft Campanian chalk laced with black flint, a combination that's rare in Champagne and found specifically in the Coteaux du Petit Morin. Collin farms three neighbouring Chardonnay parcels here and vinifies each one separately, and his estate is the only one in Champagne that releases nothing but single-vineyard wines. He's in no hurry, either. Since the 2015 base, Pierrières has spent 48 months ageing before disgorgement, and dosage stays very low (this is an Extra Brut) because Collin sees it as a tool for balance and ageing, not sweetness. If you think great Blanc de Blancs only comes from the Côte des Blancs, this bottle will change your mind.

Tasting Notes & Food Pairings

Perfect Pairings

Raw oysters or langoustine crudo; turbot or sole with beurre blanc; seared scallops with brown butter; gougères or a wedge of aged Comté; lobster rolls.

Tasting Profile

Expect a taut, chalk-driven Blanc de Blancs: lemon, green apple and white flowers, with a smoky, flinty edge and the brioche and toasted-nut depth that long ageing on the lees brings. The bubbles are fine and the acidity bright, and the very low dosage keeps it bone-dry and precise, finishing long and saline.
