Union Sacre Paso Robles Cabernet Sauvignon 2024

Union Sacre is best known for Alsace-inspired whites, so a Paso Robles Cabernet is a bit of a plot twist, and a welcome one. The winery was founded by two longtime friends who arrived on the Central Coast from opposite ends of the earth: Xavier Arnaudin, a French-trained oenologist and former boxer, and Philip Muzzy, a self-taught designer from Michigan. That French sensibility shows up here as restraint. Fermented in concrete tanks, this is a Cabernet built for drinking now rather than for a decade of waiting, with deep dark fruit, a spice-and-tobacco edge and tannins that stay smooth. Paso Cabernet with balance on its mind.

"Leave it to an orange wine specialist to chart a new future for Paso Robles Cab. This lower alcohol bottling, which seamlessly integrated the 30% new oak treatment, shows blackberry fruit aroma set against a chalky, slate-like minerality on the nose. The palate is tightly wound, offering a core of dark red fruit spiced in cocoa and dried mint, with an olive kick on the lingering acidity of the finish." —Matt Kettmann

More about Union Sacre

Union Sacré is the result of a partnership between Xavier Arnaudin (winemaking) and Philip Muzzy (label design, etc..), who arrived at the Central Coast from opposite ends of the Earth. Xavier is a WSET certified, oenology degree holder from France, Philip is a self-taught designer from Michigan who kind of misses living in a van.

Between the two of them, Xavier and Philip have 25+ years experience working in Central Coast wineries. Xavier has been cellar master or assistant winemaker for some of the Central Coasts most luminous wineries. Philip cut his teeth at Proof Wine Collective.

Xavier has such a delicate touch which is pretty funny considering he originally trained to be a boxer back in France. His wines have a way of being lovely and elegant while remaining imminently drinkable. They are also an incredible value. I’d pay two to three times their price for these just because they’re so vibrant, fresh and energetic.
