Veuve Fourny & Fils Champagne Blanc de Blancs Extra Brut 1er Cru NV

If you like your Champagne dry and laser-focused, this all-Chardonnay Extra Brut from the premier cru village of Vertus is the kind of grower bottle that makes the big-house names look a little lazy. Brothers Charles-Henry and Emmanuel Fourny are the fifth generation of a family that has made wine in Vertus, in the Côte des Blancs, since 1856. They farm sustainably (the estate is HVE-certified) and pick by hand, and this cuvée comes from vines on chalk and limestone. The Fournys' signature is the blend: they mix wine that went through malolactic with wine that didn't, so you get some roundness without losing the cut. This is serious Champagne with no fuss attached, and it shows its best at the dinner table, not just for a toast.

"The NV Blanc de Blancs Brut Premier Cru is laced with green apple, pear, mint, jasmine, sage and citrus peel, all of which lend brightness to this finely cut, chiseled Champagne from Veuve Fourny. In the glass, the Premier Cru is ethereal and translucent, but also just a bit vegetal. The Pureté is a blend of three vintages, with 20% reserve wines, done 75% in tank and 25% in oak." —Antonio GallonI

More about Veuve Fourny & Fils

A family domaine that dates back to the 1850s, Veuve Fourny is located in Vertus. Chalky soils are interspersed with clay and limestone and the domaine benefits from a unique southeastern exposure that allows grapes to ripen more fully. Farming is meticulous, parcels are vinified individually and dosage is kept to a minimum in order to best express terroir. The Fournys almost always blend wines that have gone through malolactic fermentation with wines that have not, and at least a portion is aged in Burgundy barrel, lending lush texture and fresh character to these beautiful Champagnes.

Tasting Notes & Food Pairings

Perfect Pairings

Raw oysters with mignonette; scallop or fluke crudo with citrus and sea salt; shrimp tempura; gougères or aged Comté; sole meunière.

Tasting Profile

Expect the classic Côte des Blancs profile: lemon, green apple and white flowers over chalky, saline minerality, with a hint of brioche from lees ageing. Low dosage keeps it dry and taut, with bright acidity and a fine mousse, while partial malolactic adds a touch of creaminess. Think Chablis with bubbles, finishing long and clean.
