Veuve Fourny & Fils Champagne Brut 1er Cru Grands Terroirs NV

Classic grower Champagne that shows off the chalk of Vertus, with a lot more depth than most non-vintage brut: 40% of the blend is reserve wine kept in oak casks. Today's Fournys inherited their know-how and old Vertus vineyards from grandfather Albert, his son Roger and Madame Veuve Fourny. The village sits where the Côte des Blancs hillside turns, so the slope above it faces south and gets more sun. That counts for a lot in a region where grapes don't fully ripen every year. Grands Terroirs is 80% Chardonnay and 20% Pinot Noir, from vines averaging 30 years old in brown topsoil over chalk. About 80% of the fruit comes from Premier Cru plots, mostly in Vertus, and the rest from Grand Cru sites in the Côte des Blancs. Every parcel is made into wine separately, the blend draws on three consecutive vintages, and the bottles age two and a half years in the family's 19th-century cellars before release. It's the kind of bottle we love to recommend: serious Champagne from a family that farms its own vines, at a level you can open on a weeknight.

"Firm and tangy, with a tight bead and kumquat and melon flavors married to a minerally base note and accents of toast, yellow plum, grated ginger and lemon zest."

More about Veuve Fourny & Fils

A family domaine that dates back to the 1850s, Veuve Fourny is located in Vertus. Chalky soils are interspersed with clay and limestone and the domaine benefits from a unique southeastern exposure that allows grapes to ripen more fully. Farming is meticulous, parcels are vinified individually and dosage is kept to a minimum in order to best express terroir. The Fournys almost always blend wines that have gone through malolactic fermentation with wines that have not, and at least a portion is aged in Burgundy barrel, lending lush texture and fresh character to these beautiful Champagnes.

Tasting Notes & Food Pairings

Perfect Pairings

Raw oysters with mignonette; warm Gruyère gougères; scallop crudo with citrus; shrimp tempura; roast chicken with lemon and thyme.

Tasting Profile

Expect the classic Côte des Blancs profile: lemon, green apple and white flowers over a chalky, saline minerality, with brioche and toasted-nut depth from the oak-aged reserve wines and lees ageing. Typically fine-bubbled and medium-bodied, with bright, lively acidity, it finishes dry, crisp and long. Think fuller and more layered than most non-vintage brut.
