"The NV Brut Nature Fidèle (2019) is a pure Pinot Noir. Freshly baked sourdough rye crumb combines with ripe apple flesh on the nose. The palate brings even more apple creaminess, sourdough pepper and springiness. This mellow Pinot Noir is taken to its salty extreme, enticing, mouth-watering with an acidic backbone that will make this last for years. This is resonant and rounded, with a lovely salty, appetizing finish that greatly benefits from the zero dosage." —Antonio Galloni

"The NV Brut Nature Fidèle (R14) is a Blanc de Noirs from Pinot Noir on Kimmeridgian soils and is entirely based on the 2014 vintage. Disgorged in October 2017 the oak-fermented wine shows a golden-reddish apricot color and opens with a very delicate, floral and herbal yet intense and vinous bouquet of red fruits, with warm, dry earth and spices and just a hint of oak. Bone dry (of course), fresh and elegant on the palate, this is an impressively delicate and filigreed Champagne to be enjoyed as a still wine rather than a fizz. The finish is long, clear, dry and well-structured (even with fine tannins) and reveals discreet salinity. In fact, Fidèle drinks like a Burgundy-inspired Coteaux Champenois with very fine but not effervescent bubbles, persistent lemon juice and a touch of oaky flavors. Don't use a flute to enjoy this young, gastronomic wine; instead, use a wine glass or one of the rounder, more voluminous Champagne glasses like the Lehmann Jamesse (which stresses the finesse rather than the vinous character). Don't serve the Fidèle too fresh, either, but if you must, wait a bit and don't worry if the wine is suddenly 12 or even 14 degrees Celsius—it's still delicious and even more vinous then! (To be honest, when tasted at 15 or 16 degrees Celsius, I even got some Gewürztraminer notes (lychees) on the nose...!) Tasted in July 2018." —Stephan Reinhardt

More about Vouette et Sorbee

If you ever need to convince someone how different biodynamic farming is than conventional, you should take them to visit the Gautherots’ vineyards at Champagne Vouette et Sorbée.

Bertrand Gautherot is a great winemaker. But he is first and foremost a farmer. He keeps chickens and cows and not just to follow organic and biodynamic principles; he wants to minimize any inputs that don't come from the farm itself, because they could detract from the terroir.

You can see the rewards of Bertrand’s fanatical devotion in his soils and vines. Pick up a handful of his soil and it's dark, loosely packed, and full of life—it even smells alive. And his vines prosper: they're deeply colored and look strong.

But his neighbor’s vines, which get chemical sprays and fertilizers, grow in gray soils that are so hard-packed that you couldn't pick a handful up if you wanted to. There’s no life in them—nothing crawling in them because the pesticides kill everything indiscriminately. And the vines are tall, but listless. They both have the same incredible terroir. But only Bertrand grows vines that can dig deep and really express it.

Of course, Vouette & Sorbée wouldn't have become one of the most sought-after grower Champagnes if Bertrand didn't know what to do with the incredible fruit he grows. But he does, and the wines are amazing.
