Gautherot produces some of the most terroir-driven, vinous Champagnes in the region. Saignée de Sorbée is his singular rosé, made from 100% Pinot Noir grown in the lieu-dit of Sorbée, a vineyard rich in clay and limestone that lends depth and structure to the wine. Crafted using the saignée method, this is not a delicate, pale rosé but rather a bold, structured Champagne with intensity and grip. Fermented with native yeasts and aged in used oak barrels, it is bottled without dosage, allowing its raw, unfiltered character to shine.

Deeply colored and aromatic, Saignée de Sorbée is a rosé Champagne unlike any other. The nose is wild and expressive, with notes of crushed raspberries, blood orange, hibiscus, and smoky earth, intertwined with hints of spice and dried herbs. On the palate, it is dense and powerful, revealing layers of macerated red berries, tart cherry, and citrus zest, all wrapped in a firm mineral core. The texture is almost tannic, a result of the extended skin contact, yet balanced by a laser-focused acidity that keeps the wine fresh and energetic. The finish is long and savory, with a saline note that speaks to its limestone-rich origins.

This is a Champagne for lovers of structured, food-friendly rosés—pair it with duck breast, charcuterie, or even roasted lamb with Provençal herbs. It also has the depth to complement rich seafood dishes like grilled tuna or lobster with saffron. Returns & Exchanges

We stand behind every bottle we sell.

  • If the wine is less than 10 years old and it is corked, you may return it to us for a full refund or exchange within 60 days of purchase. You must show us proof of purchase. We understand that you may not live near a shop and that it is difficult to ship open bottles of wine to us, so if there's any problem feel free to Contact Us and we'll work it out.
  • For wines older than 10 years, the consumer bears the risk of a faulty cork, but we accept returns of older bottles if the wine is faulty as a result of improper storage. Please come by the store or Contact Us if there is a problem.
  • We may, at our discretion and to the extent permitted by law, accept returns of unopened wines within 30 days of purchase if they were properly stored by the purchaser, subject to a 15% re-stocking fee.

More about Vouette et Sorbee

If you ever need to convince someone how different biodynamic farming is than conventional, you should take them to visit the Gautherots’ vineyards at Champagne Vouette et Sorbée.

Bertrand Gautherot is a great winemaker. But he is first and foremost a farmer. He keeps chickens and cows and not just to follow organic and biodynamic principles; he wants to minimize any inputs that don't come from the farm itself, because they could detract from the terroir.

You can see the rewards of Bertrand’s fanatical devotion in his soils and vines. Pick up a handful of his soil and it's dark, loosely packed, and full of life—it even smells alive. And his vines prosper: they're deeply colored and look strong.

But his neighbor’s vines, which get chemical sprays and fertilizers, grow in gray soils that are so hard-packed that you couldn't pick a handful up if you wanted to. There’s no life in them—nothing crawling in them because the pesticides kill everything indiscriminately. And the vines are tall, but listless. They both have the same incredible terroir. But only Bertrand grows vines that can dig deep and really express it.

Of course, Vouette & Sorbée wouldn't have become one of the most sought-after grower Champagnes if Bertrand didn't know what to do with the incredible fruit he grows. But he does, and the wines are amazing.
