"The ancestral sparkling 2022 Phaunus Pet Nat White has the ambition to be a serious quality sparkling wine, disgorged to avoid surprises when you open a bottle (I've seen bottles shooting out like hell), with fine bubbles and the acidity and freshness from the region. It's a 50/50 blend of Arinto and Loureiro from their 16-year-old vines on granite soils at 100 meters above sea level. The varieties fermented separately, pressing the full clusters and then blended and put in bottle to finish fermenting. It has a bright, clean and pale color with some green tints, a clean nose with notes of waxy apples, yeasts and herbs and a light and fresh palate with very good balance, clean and precise, with tiny bubbles that give it texture. It has a moderate 10.5% alcohol, a pH of 3.15, seven grams of acidity and a bone-dry finish." -Luis Gutiรฉrrez
