Cool-climate Australian Shiraz made with an unmistakably northern-Rhône move: it's co-fermented with 2 to 4% Viognier, the same trick they use in Côte-Rôtie to lift aromatics and set the color. The fruit comes off the original 1994 planting, a north-facing slope of red volcanic soil over limestone and sandstone in the Moorabool Valley outside Geelong, where Antarctic winds and low rainfall keep everything lean — about as far from the stereotype of hot-climate Australian Shiraz as you can get. It's raised 18 months in French oak, only 20% of it new, so the wine tastes of place and pepper rather than vanilla. Gary Farr learned his trade with Jacques Seysses at Domaine Dujac and his son Nick followed him there; the estate has 36 acres under vine and the wines are made in small quantities. Give it an hour in a decanter.

More about By Farr

Father and son Gary and Nick Farr farm 130 acres of land in Victoria’s Geelong region of Australia, 36 of which are under vine. Here, cool breezes from Port Phillip Bay and winds from the west help to regulate the temperature, while dark, volcanic soils (atop limestone) ensure wines that maintain impressive freshness and coolness alongside ripeness of fruit.

When it comes to New World juice, By Farr has long been one of our go-to producers. If you love stemmy, red-fruited Pinot Noir and refreshing, mineral-driven Chardonnay, these bottles are for you – think Old World inspiration meets New World fruit.

Gary and Nick have worked countless vintages in Burgundy, and have a particularly close relationship with Jeremy Seysses of Domaine Dujac in Morey-Saint-Denis and Dominique Lafon of Domaine des Comtes Lafon in Meursault. That Burgundian knowledge shines through in their wines.

Tasting Notes & Food Pairings

Perfect Pairings

Grilled lamb, peppercorn steak, sausages with lentils, or braised short ribs. The pepper note is a natural with anything off a charcoal grill.

Tasting Profile

Blackberry and plum with cracked black pepper, violets, olive and smoked meat. Medium to full-bodied, firm but fine-grained in tannin, with the acidity you only get from a cold site. Long, peppery, savory finish; oak stays in the background.
