This is the Chardonnay Gary Farr planted for the long haul — the high-density Côte Vineyard the family calls the backbone of the Farr dynasty for decades to come, and a step up in ambition from the estate bottling. The Côte plantings face north, northeast and east and pull in three distinct soil types, from red-brown loam with buckshot stones to black volcanic soil shot through with fragmented limestone. That range is the point: the blend gets richness from the clay-holding slopes and tension from the stonier, faster-draining ones. Grapes are whole-bunch pressed and fermented slowly with wild yeast in barrel, with 50% new French oak — nearly double what the estate Chardonnay sees, and the wine has the concentration to carry it. Made in tiny quantities in the Moorabool Valley outside Geelong, where the Farrs farm 36 acres of vines in a cold, windy, low-rainfall pocket 100km southwest of Melbourne. Give it a few years if you can.

More about By Farr

Father and son Gary and Nick Farr farm 130 acres of land in Victoria’s Geelong region of Australia, 36 of which are under vine. Here, cool breezes from Port Phillip Bay and winds from the west help to regulate the temperature, while dark, volcanic soils (atop limestone) ensure wines that maintain impressive freshness and coolness alongside ripeness of fruit.

When it comes to New World juice, By Farr has long been one of our go-to producers. If you love stemmy, red-fruited Pinot Noir and refreshing, mineral-driven Chardonnay, these bottles are for you – think Old World inspiration meets New World fruit.

Gary and Nick have worked countless vintages in Burgundy, and have a particularly close relationship with Jeremy Seysses of Domaine Dujac in Morey-Saint-Denis and Dominique Lafon of Domaine des Comtes Lafon in Meursault. That Burgundian knowledge shines through in their wines.

Tasting Notes & Food Pairings

Perfect Pairings

Roast chicken with butter and tarragon, seared scallops, crab with drawn butter, or a farmhouse Comté. It has the weight for richer fish like turbot or halibut.

Tasting Profile

Aromas of white peach, lemon curd, hazelnut and struck flint. Full-bodied and textural from the barrel ferment and lees, but held together by firm, citrusy acidity. Long, faintly saline finish; the oak is present but folded in rather than sitting on top.
