Doyard makes Les Lumières only in the vintages they consider truly great, and 2012 is one of them — a year that needs no special pleading in Champagne. This is the estate's selection from its best terroirs: 65% Chardonnay from the Grand Crus of Avize and Le Mesnil-sur-Oger, 35% Pinot Noir, grown on clay and limestone and farmed organically, much of it worked by horse. It ferments and ages in older 228-liter Burgundy barrels with no malolactic fermentation, then sits ten full years on its lees — 120 months — before being disgorged at 0.8 g/L. That is essentially no dosage at all, so there's nothing to soften or round off what a decade under crown cap has built. The Doyard family has been growing in Champagne since 1677 and bottling in Vertus since 1927; this is the bottle where that patience shows most plainly. Treat it as a wine rather than an aperitif: white wine glasses, not flutes, and not straight from the coldest part of the fridge.

More about Doyard

The Doyard family has roots in Champagne dating back to the 17th century and starting gaining recognition in the 70's for creating precise, mineral-etched champagnes. The domaine farms 10 ha of vineyards in Vertus and the Grand Cru villages of Le Mesnil, Cramant, Oger, Avize and Ay. The viticultural philosophy employed by the domaine is a ‘non-dogmatic’ approach to biodynamic farming with absolutely no herbicides or pesticides used. Most of the vineyards are worked by horse and yields are kept intentionally kept low, adding to the focused intensity that defines the house style.

In the cellar, all of the wines undergo very long lees aging—a minimum of 48 months, lending a vinous quality to the wines that have become the envy of Vertus. Every single decision made in the vineyard and cellar are geared toward making the most expressive, terroir focused Champagne possible.

Tasting Notes & Food Pairings

Perfect Pairings

Built for the table: roast chicken with its own juices, turbot or halibut in beurre blanc, a platter of raw oysters and langoustines, lobster with drawn butter, or aged Comté and Parmesan. It also handles richer dishes like scallops with brown butter or a mushroom risotto.

Tasting Profile

Dry and bone-driven, with almost no perceptible sweetness. Aromas of lemon peel, toasted hazelnut, brioche and chalk dust, with the honeyed, gently oxidative notes that come from long lees aging. Medium-bodied and quite vinous for Champagne — the Pinot Noir adds weight in the middle — with fine, persistent bubbles and firm, mouthwatering acidity. The finish is long, saline and savory rather than fruity.
