Created by Richard Geoffroy—the man who spent nearly three decades as chef de cave at Dom Pérignon—IWA 5 brings Champagne's philosophy of assemblage to Japanese sake. Assemblage 2 blends three rice varieties (Yamada Nishiki, Omachi, and Gohyakumangoku) with five different yeasts, including two wine yeasts, to create a sake of unusual width and complexity. Polished to 35%, qualifying as junmai daiginjo. Geoffroy describes Assemblage 2 as sake that drinks 'as white wine'—a bridge between two great fermentation traditions.

Returns & Exchanges

We stand behind every bottle we sell.

  • If the wine is less than 10 years old and it is corked, you may return it to us for a full refund or exchange within 60 days of purchase. You must show us proof of purchase. We understand that you may not live near a shop and that it is difficult to ship open bottles of wine to us, so if there's any problem feel free to Contact Us and we'll work it out.
  • For wines older than 10 years, the consumer bears the risk of a faulty cork, but we accept returns of older bottles if the wine is faulty as a result of improper storage. Please come by the store or Contact Us if there is a problem.
  • We may, at our discretion and to the extent permitted by law, accept returns of unopened wines within 30 days of purchase if they were properly stored by the purchaser, subject to a 15% re-stocking fee.

Richard Geoffroy, who oversaw wine production at Dom Perignon for multiple decades, discovered sake and he fell for it hard. So hard that he left the job then any of the rest of us would kill to have. IWA is now his full time passion.

His sake is called "IWA 5", and it is produced at a Kura (brewery) nestled among the gentle mountains of the prefecture of Toyama. Through precise orchestration, five classes of elements are brought into unison -- hence the "5": rice origin (terroir), rice varieties (there are three), yeast varieties (there are five), yeast production methods and fermentation methods. Place, raw materials and methods are all designed to create a world class sake that meets the standards of someone who has produced luxury beverages all his life.
