Iwa 5 Junmai Daiginjo Sake Assemblage 5 With Gift Box (720ml)

$18999

From the Brewery: Assemblage 5 - The interplay of warmth, gravitas and tonicity expressed in Assemblage 5 is IWA’s unprecedented – somewhat avant-garde – proposition.

THE NOSE
The aromas of pear, raspberry and plum blend with the notes of rose and jasmine. Such a complexity is heightened by the spicy freshness of pine and geranium.

THE PALATE
The contrast between palate and nose is engaging. There is a palpable duality of the pure well rounded fruity/ foral aromatics and the archaictactile presence of a gentle astringency. The silky and warm opening dissolves into a dry minerality and lingers with a vibrant touch of citron, white pepper and licorice.

More about

Richard Geoffroy, who oversaw wine production at Dom Perignon for multiple decades, discovered sake and he fell for it hard. So hard that he left the job then any of the rest of us would kill to have. IWA is now his full time passion.

His sake is called "IWA 5", and it is produced at a Kura (brewery) nestled among the gentle mountains of the prefecture of Toyama. Through precise orchestration, five classes of elements are brought into unison -- hence the "5": rice origin (terroir), rice varieties (there are three), yeast varieties (there are five), yeast production methods and fermentation methods. Place, raw materials and methods are all designed to create a world class sake that meets the standards of someone who has produced luxury beverages all his life.
