This is own-rooted Chardonnay from a few miles off the Pacific, and it comes from a project where Raj Parr runs everything himself, vine to bottle. Greg Phelan planted the vines in 2007 on his family's homestead along Steiner Creek in Cambria, a farm the Phelans founded in 1851, just after California became a state. Parr later moved the vineyards over to regenerative farming and now leases the whole farm. The creek splits two geologic terranes, and on its south bank a sheer ridge of hard white Cambria Felsite rises up (a volcanic rock somewhere between rhyolite and tuff). In the cellar the house keeps out of the way: native yeasts, wine moved by gravity into older barrels, no fining or filtering, and every bottle corked and labeled by hand. Parr names Stéphane Tissot, Thierry Allemand and Jean-Louis Chave as his main inspirations, so if your idea of California Chardonnay is big and buttery, this is the other side of the argument. The whole estate makes a little under 1,000 cases, so it's worth grabbing when you see it.

Tasting Notes & Food Pairings

Perfect Pairings

Dungeness crab with lemon butter; grilled halibut with beurre blanc; raw oysters or scallop crudo; roast chicken with tarragon; a wedge of aged Comté.

Tasting Profile

Expect a lean, coastal style of Chardonnay: lemon, green apple and white flowers, with a salty, stony edge rather than butter or vanilla. Older barrels typically add texture more than oak flavour, and the cool maritime site keeps alcohol moderate and acidity bright. Think closer to Chablis than classic California, with a dry, taut, mineral finish.
