A parcel of Puligny planted in 1960 and farmed by the family that owns it — which in this village is rarer than it sounds. For eighteen years the Thomas family's vines were leased out to cousins; in 2010 Jacqueline Collardot finished her viticultural training in Beaune, took them back, and made her first vintage in 2015. Her son Matthieu joined in 2018, and together they work just two and a half hectares in and around Puligny-Montrachet. Les Nosroyes sits on a stony clay-limestone slope at 240 meters, its name a worn-down version of the old French noieroie, a place where walnut trees grew. The fruit is pressed slowly over four hours, fermented with indigenous yeasts in 350-liter barrels, aged ten to twelve months on lees and then rested a few months in stainless steel before bottling — a recipe built for detail rather than weight. Drink it now with a decent decant, or hold it three to five years.

"Pungent aromas of smoky reduction and wood dominate the fruit at present. There is acceptably density though excellent precision to the beautifully texture middle weight flavors that conclude in a lightly citrus-inflected and youthfully austere that offers slightly better depth and persistence. This does of course need to properly clean up but my projected range assumes that it will." —Allen Meadows

More about Thomas-Collardot

Where do new Burgundy domaines come from? Sometimes from colossal financing. Sometimes from families regaining control of vineyards that have been leased out in sharecrop deals for many years. This is the latter.

Domaine Thomas-Collardot was founded in 2015 with one wine by Jaqueline Collardot and her son Matthieu. The family is slowly taking back vineyards that have been leased out in one form or another since 1991. They now have about 2.5 hectares.

The winemaking style is pure and clean with very little new wood used, up to about 30%. No set recipe. In 2010 Jacqueline's father retired and she inherited the vineyards, Domaine Thomas Pierre. She favors a very slow elevage on the lees for two winters. Bottles in March aligned with the proper moon phase. They intend to get organic certification. The sole premier cru is plowed by horse. This is a domaine utilizing the best old and new techniques.

Tasting Notes & Food Pairings

Perfect Pairings

Roast chicken with tarragon, scallops seared in brown butter, sole meunière, or a Comté and leek tart. A wheel of ripe Époisses on the side is not a bad idea either.

Tasting Profile

Pale gold, with citrus zest, white peach and a light hazelnut note from the barrel. Dry and medium-bodied, with bright acidity running the length of the palate and only a whisper of oak. The finish is long, stony and clean.
