Hรฉbrart has holdings in a number of top sites in both the Vallรฉe de la Marne and the Cรดte des Blancs but is a specialist in the great village of Mareuil-sur-Aรฟ, where you find top spots like the Clos des Goisses and Selosseโ€™s Sous le Mont.

When he blends his top cuvรฉes, he has a lot of great source material to choose from but even Hรฉbrartโ€™s entry-level wines are pitched absolutely perfectly for Thursday. They're elegant and complex, and will elevate any dish. But they're not flashy or over the top: more supporting players than showboaters.

"The latest rendition of Hรฉbrart's NV Brut Premier Cru Sรฉlection, disgorged earlier this year, is derived largely from Mareuil-sur-Ay, supplemented by some 13% from Chouilly. Offering up aromas of citrus oil, white flowers and fresh pastry, it's medium to full-bodied, with good concentration and structure in a charming format, concluding with an elegantly chalky finish."

Salty, crisp, and lean, this beauty is made from 65% Pinot Noir and 35% Chardonnay. I brought this to a birthday dinner at The Cavalier and it paired perfectly with all of our courses, from a platter of raw oysters to dungeness crab souffle to their famous fish and chips.
