What is this wine?
Founded in 1734, Taittinger is one of Champagne’s historic houses, known for its Chardonnay-driven style. Comtes de Champagne is the estate’s prestige cuvée, a Blanc de Blancs made exclusively from Grand Cru vineyards in the Côte des Blancs (notably Avize, Le Mesnil-sur-Oger, and Cramant). Only produced in the best vintages, it is fermented in stainless steel and aged for at least 10 years on the lees before release. The 2007 vintage, though cooler and earlier than surrounding years, produced wines of finesse, precision, and longevity.

"This is a wine I have followed closely since release and it's definitely one that has progressed impressively, even if it took its sweet time to do so. A relatively restrained and maturing nose reflects notes of cool petrol, green apple, citrus rind, white flower and a hint of yeast character. The beautifully refined and equally restrained middle weight flavors possess a really lovely mouthfeel, indeed it's almost delicate, thanks to the very fine mousse though this is not especially dry on the nicely complex finish, though this is not to say sweet."

There are very noticeable notes of saline minerality, smoke and toast. The wine is approachable and silky textured on the palate, with a lively mousse and rich, mouth-filling plumpness."
