Willi Schaefer is a tiny, four-hectare family estate in the village of Graach — one of only a handful of producers (Müller, Prüm, Haart) who truly belong in the conversation about Germany's greatest traditionalists. The family's records go back to the 1100s, but the wines feel weightless and timeless: old-vine, ungrafted Riesling from steep slate, made low-tech and filigreed. Domprobst is the more mineral of their two Graach sites, slower to unfold than Himmelreich.
