A Puligny specialist's take on the village next door: Jacques Carillon's Chassagne-Montrachet is the broader, more generous wine in his lineup, so it's the one to open when you want white Burgundy with some flesh on it. The Carillons have been in Puligny a long time (documents from 1520 record a Jehan Carillon in the village), and Jacques has worked under his own name since the family domaine was split between him and his brother François, starting with the 2010 vintage. His Chassagne comes from a single small parcel, 0.27 hectares in the lieu-dit Voillenot-Dessous, planted in 2013 on the rocky limestone hillside at the southern end of the Côte de Beaune. In the vineyard he uses no herbicides, works the soil by plough and by hand and prunes short to keep yields down.

Tasting Notes & Food Pairings

Perfect Pairings

Roast chicken with morels and cream, seared scallops in brown butter, sole meunière, lobster rolls, or warm gougères made with Comté.

Tasting Profile

Expect the classic Chassagne-Montrachet profile: ripe yellow apple, pear and citrus, with a light touch of toast and hazelnut from a modest share of new oak. It's typically broader and more generous than neighbouring Puligny-Montrachet but still medium-bodied, with fresh acidity and a chalky, mineral finish that keeps the richness in check.
