If you want to know what village Puligny-Montrachet is supposed to taste like, with nobody's thumb on the scale, this is a good place to start: Jacques Carillon blends eleven small parcels from seven sites across the appellation into one wine, so you get the whole village rather than one corner of it. The Carillons are known for the most classic, often understated wines in Puligny, and they've had time to get there. Documents from 1520 already record a Jehan Carillon in the village, and Jacques now farms his own 5.5-hectare domaine, most of it in Puligny. The vines for this cuvΓ©e average forty years and are farmed with almost no chemicals: no herbicides, soil worked by plough and by hand, and short pruning plus heavy debudding to keep yields down. Carillon's usual approach with this cuvΓ©e is a year in barrel, then six months in stainless steel, with only a light filtration before bottling. Carillon's own summary of his Puligny is "a wine that combines a delicate taste with a full body and mineral tones," which is about as honest a description of classic white Burgundy as you'll find. 2024 was a hard year in Burgundy, with a wet spring, constant downy mildew and a very small crop. Plan to drink it within three to six years of bottling.

Tasting Profile

Expect classic, understated village Puligny: white flowers, lemon, green apple and pear, with a subtle hazelnut note from barrel ageing kept discreet by a spell in stainless steel. The palate is typically fuller than the delicate aromas suggest, held taut by bright acidity and a chalky, mineral edge, finishing dry, long and clean.
