This is the wine Jean-Baptiste Adam calls the house's signature: dry, old-vine Grand Cru Riesling that he makes for the dinner table, here in magnum. It comes from Kaefferkopf, the first site in Alsace to be legally delimited, back in 1932. The name already appears in the Abbey of Pairis's land records in 1338. The vines were planted between 1955 and 1970 on granite, silica, limestone and clay, on the hillsides just south of Ammerschwihr. The Adams have been making wine in that village since 1614. Jean-Baptiste moved the vineyards to biodynamic farming in 2003. The grapes are picked by hand, pressed as whole clusters, fermented on native yeasts in stainless steel tanks, so the site comes through without oak getting in the way. He describes it as a Riesling that improves with age, and that's a good reason to buy the magnum: open it at a dinner big enough to finish it, or let it rest a few more years.

Tasting Notes & Food Pairings

Perfect Pairings

Trout amandine; roast chicken with preserved lemon; pork tenderloin with a creamy mushroom sauce; Thai green papaya salad with grilled shrimp; scallop crudo with lime and sea salt; aged Comté.

Tasting Profile

Aromas of citrus and exotic fruit. The palate is rich and structured but dry, with fine acidity and a mineral streak. The finish is crisp and a little salty.
